Hokkaido Seafood
Hokkaido lands more crab, uni and scallops than any prefecture in Japan, and the best of it is served on the island before it ever reaches Tokyo. We plan dawn market walks in Sapporo and Otaru, and book counters where the chef serves what was landed the night before.
Cold-water seafood from Hokkaido grades above the rest of Japan at the Toyosu auction. The island catches it first, and the best of it never leaves.
