Otaru Counter Sushi
Eight seats, one chef, morning catch
Small ateliers along Otaru's Sushi-ya Dori where the fish landed hours earlier — omakase paced by the chef, not by a menu.
What makes it special
- Otaru's port is 20 minutes from the counter — uni and scallop arrive the same morning.
- 8–12 seats only, so the chef adjusts each piece to your pace and appetite.
- Edomae technique with Hokkaido fish — aged tuna, cured kohada, warm shari.
What to order
- The chef's omakase — 12 to 16 pieces depending on the day's landings.
- Add a second round of uni if it is Rishiri or Rebun bafun in summer.
- Hot green tea over sake if you want to taste every piece clearly.
Concierge tips
- Lunch omakase costs roughly half the dinner price with the same fish.
- Counter seats are released 30 days out — we hold them the moment they open.
- Pair it with the Otaru canal at dusk — a 10-minute walk from most counters.
Best time to go
Year-round; uni peaks June to August, crab and herring in winter.
How we book it
Counter seats reserved through our concierge network — two weeks ahead is usually enough.
